Cookie Dough Ice Cream Sandwich Recipe

You have to make this! The ice cream is made with raw milk and raw cream from our Jerseys, which creates a smooth, buttery ice cream. Throw in frozen cookie dough chunks and sandwich the ice cream between two soft cookies - and it’s amazing.

Here is the ice cream recipe. 🍨 You will also need to make chocolate chip cookie dough (our hands down favorite recipe is from Hope’s Table cookbook!).

You will need:

2 cups Raw Cream
2 cups Raw Milk
1/2 cup Raw Honey
3 pastured Egg Yolks
2 Tbsp Vanilla extract
1/2 tsp Redmond Real Salt
1 batch of chocolate chip cookie dough

In a blender, mix the cream, milk, egg yolks, honey, salt and vanilla. Pour into the ice cream machine and churn according to the machine’s directions. I churned mine for 26 minutes total.

While it’s churning, mix your cookie dough together. Freeze small pieces on parchment paper for later, and bake large cookies for the sandwiches.

When the ice cream is thick (20 min churned) add in the frozen dough pieces. When finished, scoop the ice cream into a container and freeze for a couple of hours. My ice cream maker makes a soft serve style so freezing makes the ice cream thicker.

Take your cooled cookies and scoop ice cream onto one cookie and stack a second cookie on top. We all loved the full dairy flavor. Enjoy!!
