Salt River Ranch Molasses Cookies

My friend, Amy Rhodes, shared her favorite molasses cookie with me and it has become a family favorite, especially at Christmastime!

Amy and her family are beef ranchers at the beautiful Salt River Ranch in Star Valley, Wyoming. They ship pure Wyoming protein nationwide, have a ranch goods store, and will soon offer ranch stays in their lovely guesthouse.

I hope to make it to Wyoming sometime soon, but for now, I make these cookies that make me think of Amy and the stunning views she shares from her ranch. Check out their website to learn more!

This recipe is so easy to whip up and I know you will love it!

Salt River Ranch Molasses Cookies

Ingredients:

3/4 cup butter

1 cup sugar, plus more for rolling cookies

1 egg

1/4 cup molasses

2 tsp baking soda

1 tsp cinnamon

1 tsp ground ginger

1/2 tsp salt

2 cups all purpose white flour


In a stand mixer, blend the butter, sugar, egg and molasses well.

Add in the baking soda, cinnamon, ginger, salt and flour and mix.

Drop rounded dough balls into granulated white sugar and roll until coated.

Place on a parchment lined baking sheet.

Method 1: for a flatter, chewier cookie: bake at 350 for 7 - 9 minutes or until tops begin to crack. Do not over bake.

Method 2: for a higher, more dense cookie: bake at 400 for around 6 minutes just until tops get a tad golden.

Let cool before eating. Enjoy!
